Artichoke Delight Recipe

 

This recipe has been around for ages, but is a favorite with many people. It is better if you use top quality ingredients, such as freshly grated good quality Parmesan cheese (not in the can). It is usually served warm for best flavor.

15-ounce can artichokes (not marinated), rinsed, drained and chopped

cup mayonnaise

cup freshly grated Parmesan cheese

clove garlic, minced

teaspoon salt, optional
1 1/2
 loaves party rye or crackers of your choice

 

Mix all ingredients except bread.  Spread on rye slices and broil 3-5 minutes until bubbly and brown.  Mixture may also be put into a 3-cup oven dish, baked at 375° 15 minutes and served as a spread with rye bread.  Serves 10 to 20.
