Fancy Mexican Shrimp Cocktail Recipe

 

This recipe makes a fancy shrimp cocktail with a Mexican flavor. It is excellent, but some work to put together. It is fairly low calorie, except for the avocado and tortilla chips! One of my favorite Mexican Recipes.

pound medium shrimp, cooked, peeled and tails removed

English cucumber, diced medium

cup diced red onion

tablespoon minced cilantro

tablespoon lemon juice

teaspoon lime juice

tablespoons prepared horseradish

cups ketchup

dash Tabasco, to taste

teaspoon coarsely ground black pepper

teaspoon kosher salt

slices lime

sprigs cilantro

medium avocado, sliced lengthwise into 12 slices

lemon, cut into wedges
Tortilla chips

 

 

In a medium bowl, combine the shrimp, cucumber, onion, minced cilantro, lemon and lime juices, horseradish, ketchup, Tabasco, pepper and salt.  Toss to mix thoroughly.  Refrigerate for at least 30 minutes.

 

Divide the mixture into 4 chilled martini glasses.  Cut a notch on each slice of lime and put one on the edge of each glass.  Garnish each martini with 2 cilantro sprigs and a fan of 3 avocado slices.  Place each glass on a salad plate with a couple of lemon wedges and some tortilla chips.  Serve with additional tortilla chips for scooping.
