Excellent Guacamole Recipe

 

I really like this guacamole recipe. It has a nice blend of tastes. The lemon juice adds zing and helps keep the avocado from turning dark. The chiles also add complexity. The salt and pepper are essential. I prefer Doritos tortilla chips unless I go to all the work to fry them myself and then this recipe is out of the world yummy! Be sure to place plastic wrap directly on the top of the guacamole to keep it from turning dark. You want to keep air from touching the guacamole when you are storing it.

ripe avocados, peeled and cut up

medium onion, finely chopped (about 1/2 cup)

4-ounce can chopped green chiles

tablespoon lemon juice
1
teaspoon salt
1/2
teaspoon coarsely ground pepper
1
medium tomato, finely chopped (about 3/4 cup)
Tortilla chips

 

 

Beat avocados, onion, chili peppers, lemon juice, salt, and pepper until creamy.  Stir in tomato.  Cover and refrigerate at least 1 hour.  Serve with corn chips.  Makes about 2 cups dip.
