Pineapple Cheese Ball Recipe

This recipe is an old one, but it quite tasty. The ingredients are easy to find and it goes together fairly fast, although it does need to be made ahead to chill. The pecans taste better if you lightly toast them in a 350 degree oven for a few minutes. Let them cool before you chop them. I use a hand mixer to mix this, as it is quite thick.

2
8-ounce packages cream cheese, softened
1
8-1/2-ounce can crushed pineapple, well drained
1/4
cup chopped green pepper
2
tablespoons chopped onion or green onion
1/2
teaspoon salt
1
dash Tabasco sauce
1
cup pecans, chopped
Maraschino cherry slivers
Table water-style crackers

Combine cream cheese, pineapple, green pepper, onion, salt, and Tabasco.  Shape into a ball and refrigerate to set.  After 1 to 2 hours, roll in nuts and garnish with cherries.  Serve with crackers.
