Banana Pancakes

 

These pancakes are a special treat and are good to make when you have ripe bananas on hand!

cup flour

teaspoons baking powder
1/8
teaspoon nutmeg

cup mashed fresh bananas (about 3 medium bananas)

large egg
1
cup milk

tablespoons vegetable oil
2
tablespoons sugar
2
teaspoons lemon juice

 

 

Heat griddle to 375°.  Sift together flour, baking powder, and nutmeg.  Set aside.  Mash bananas in medium bowl.  Add egg, milk, oil, sugar, and lemon juice.  Beat well.  Add flour mixture to egg mixture, stir just until combined.  Pour 1/4 cup batter onto heated griddle per pancake.  Cook first side until puffed, full of bubbles, and dry looking around edges.  Flip and cook on second side only until golden.  Makes about 15 pancakes.  Recipe can be doubled.  Can add blueberries.
