Buttermilk Pancakes

Buttermilk Pancakes

 

These pancakes are delicious and not much more trouble than a mix.  A good quality buttermilk makes a better pancake.

cups flour
2-2/3
cups buttermilk
1/4
cup butter, melted

tablespoons sugar

teaspoons baking powder

teaspoon baking soda

teaspoon salt

 

 

Beat egg with hand beater until fluffy; beat in remaining ingredients just until smooth.  Grease heated griddle (375°).   Pour 1/4 cup batter onto hot griddle.  Cook pancakes until puffed and dry around the edges.  Turn and cook other sides until golden brown.  Makes about 16 pancakes.
