Delicate Buttermilk Pancakes

 

These pancakes are very light and great for special occasions.

egg yolks
1 2/3
cups buttermilk
1
teaspoon baking soda
1 1/2
cups sifted all-purpose flour
1
tablespoon sugar
1
teaspoon baking powder
1/2
teaspoon salt
3
tablespoons soft butter
3
egg whites, stiffly beaten

 

 

Beat egg yolks well with rotary beater.  Beat in buttermilk and baking soda.  Sift together flour, sugar, baking powder and salt.  Beat into batter.  Beat in butter and gently fold in egg whites.

 

Heat griddle to 375°.  Drop batter by 1/4 cupfuls onto greased griddle.  Cook until puffed and full of bubbles, but before they break.  Turn and brown other side.  Makes 16 pancakes.
