Delicious White Bread


This is a good basic white bread recipe.  Be sure to use bread flour, which has higher gluten (protein) content than all-purpose flour.



packages active dry yeast
cups water
tablespoons sugar
teaspoons salt
cup oil or shortening
5 to 6
cups bread flour



Grease two 8x4 or 9x5-inch loaf pans.  In mixing bowl, whisk together water, yeast, and a pinch of the sugar.  Let stand 5 minutes.  Add 2 cups flour, sugar, salt, and oil to bowl.  Mix well.  Stir in additional flour as needed and knead for 10 minutes.


Place dough in greased bowl, cover and let rise until light and doubled, about 1 to 1-1/2 hours.  Deflate dough.  Divide dough in half.  Shape into balls.  Let rest on counter covered with inverted bowl for 15 minutes.  Shape into 2 loaves by rolling dough into two 14 x 7-inch rectangles.  Starting with shorter side, roll up each tightly.  Pinch edges and ends firmly to seal.  Place seam side down in greased pans.  Cover and let rise in warm place until dough fills pans and tops of loaves are about 1 inch above pan, about 1 hour.


Heat oven to 375 degrees.  Bake 40 to 50 minutes (190 to 200 degrees on instant thermometer).  Immediately remove from pans and cool on wire racks.  Brush with melted butter is desired.  Makes 2 loaves.
