Popovers

 

Popovers are an old favorite that are not seen much lately.  A popover pan is a pan similar to a muffin pan, but with more widely spaced cups.  You can use a muffin pan if you want, but the popovers may run into each other.  There used to be a restaurant at the pier in Huntington Beach, California that served popovers to all guests. This is an excellent popover recipe.

cups flour
2
cups milk
1
teaspoon salt

 

 

Heat oven to 450°.  Grease 12-cup popover pan generously.  Beat eggs slightly.  Beat in remaining ingredients just until smooth.  Fill pans 1/2 full.  Bake 20 minutes.  Decrease oven temperature to 350 degrees.  Bake 20 minutes longer.  Serve hot.
