Waldorf Astoria Cake

 

cups sifted cake flour, then sift 4 times

cup shortening
1 1/2
cups granulated sugar

eggs

ounces red food coloring

teaspoon vanilla extract

teaspoons cocoa
1
cup buttermilk
2 1/2
pinch  salt sifted with the flour
1
teaspoon baking soda
1
teaspoon vinegar

 

 

Heat oven to 350F.  Grease and flour 2 8-inch cake pans.  Cream shortening and sugar.  Add eggs and beat well.  Make a paste of cocoa and a little of the food coloring, and add to the creamed mixture.  Then add the rest of the food coloring and beat thoroughly.  Add buttermilk, salt and flour alternately.  Add vanilla.  Mix vinegar and soda in a cup.  Stir the vinegar mixture well.  Add to cake mixture.  Mix well.

 

Bake at 350 for 30 minutes.  Let cake cool 10 minutes in pans and then remove from pans.  Frost with the following icing:

 

Frosting:

cup milk

tablespoons flour

cup powdered sugar

cup butter, softened

tablespoon vanilla

 

 

Use a little of the milk to make a paste with the flour, then add the remaining milk.  Cook in a double boiler until thick.  Stir constantly.  When this is done, let cool thoroughly. 

 

Cream powdered sugar and butter well.  Then add vanilla.  Add flour and milk mixture gradually to sugar and butter mixture.  Then beat 2 minutes and ice cake.  Can split layers first, if desired.  Refrigerate to store.
