Tangy Cranberry Ice


cups cranberry juice cocktail
teaspoons grated orange rind
cups orange juice



Combine all ingredients in a 13x9x2-inch pan; freeze until firm.  Remove from freezer. and let stand 15 to 20 minutes.  Spoon frozen mixture into a large mixing bowl; beat at low speed of an electric mixer until smooth.  Return to freezer until ready to serve.  Let stand at room temperature until mixture can be scooped into balls.  Serve in individual compotes. 


Yield 8 servings, 103 calories per 1 cup serving.
