Traditional Rice Pudding

cup uncooked rice
1/2
teaspoon salt
1/4
cup sugar
1/4
teaspoon cinnamon or nutmeg
2 1/2
cups milk
1/2
cup seedless raisins, if desired

 

 

Combine all ingredients in top of double boiler.  Cook covered over boiling water until rice is tender and milk is almost absorbed (1 hour) stirring frequently.  Serve warm. 

 

Makes 6 to 8 servings.
