Mattie Mortensen’s Prize-Winning Pie Crust

cups flour
1 1/4
cups shortening (butter-flavored Crisco)
1/2
teaspoon salt

egg, beaten
1
tablespoon vinegar
8
tablespoons water

 

 

Mix the flour, shortening and salt until it is the texture of cornmeal, with your hands or a pastry blender.  Combine beaten egg, vinegar and water.  Add the moist ingredients, a little at a time, until dough is the right texture and stops sticking to your fingers.  Roll into a circle between sheets of waxed paper. 

 

Makes 2 9-inch crusts.
