Baked Ham and Eggs

pound shaved Black Forest ham
8
large eggs
Butter
Salt, pepper, nutmeg
1
cup shredded Cheddar cheese

 

           

Preheat oven to 400 degrees.  Spray eight custard cups or small soufflé dishes with nonstick cooking spray.  Line each cup with two slices of ham.  Break an egg into each ham-lined cup.  Sprinkle with salt, pepper, and nutmeg.  Add a tiny bit of butter on top of egg.  Place cups on a baking sheet for ease of handling.

 

Bake eggs in hot oven for 10 minutes.  Remove and sprinkle with cheese.  Return eggs to oven and bake for an additional 5 minutes.  Remove from oven and let sit for 5 minutes.  Serve 2 cups to each person.  You can remove the eggs from the cups before serving if desired.
