Golden Potato Casserole

cups frozen shredded potatoes
4
green onions, chopped
2
cups grated cheddar cheese
2
cups ham, diced
1
tablespoon diced green peppers
6
large eggs, beaten
1/4
cup sour cream
1/4
cup milk
1/2
teaspoon salt
Pepper to taste

 

 

Grease a 9” square pan.  Make layers with half each of the potatoes, onions, green pepper, ham and cheese.  Repeat layers for the second half.  Mix eggs, sour cream, milk, salt and pepper and pour over layers.  Bake uncovered at 400° oven for 45 minutes.  Cover and continue baking for 10 more minutes, until golden brown. 

 

Serves 4 to 6.
