Ground Beef Casserole

pound lean ground beef

medium onion, chopped

clove garlic, minced

8 ounce can tomato sauce
1/2
cup tomato juice or water
2
tablespoons chili powder
1/4
teaspoon dried oregano

15-1/2-ounce can kidney beans with juice or refried beans

16 ounce bag Fritos
2
cups shredded cheddar cheese
2
cups shredded lettuce
1
large tomato, chopped
1/2
cup chopped onion or green onion

 

 

Preheat oven to 350 degrees.  Grease a 2 quart square baking dish.  Set aside.

In a large skillet over medium heat, brown the meat, onion, and garlic.  Drain the excess fat.  Stir the tomato sauce, tomato juice, chili powder and oregano into the meat mixture.

 

Layer the meat mixture, beans and one-half of the corn chips in layers twice in the prepared baking dish, ending with corn chips.

 

Cover and bake in the oven for 40 minutes.  Serve with lettuce, tomato, onion, and cheese, and rest of chips.  Makes 4 servings.  Can also add cilantro to meat mixture.  Can serve with salsa and/or sour cream.
