Beef Taco Mac

pound beef cubed steaks (or ground beef)

tablespoon vegetable oil

medium onion, chopped
1/4
teaspoon salt

14-1/2 ounce cans diced tomatoes, undrained
1/2
cup water

1-1/4-ounce package Taco seasoning (1/4 cup)
1 1/2
cups uncooked rotini (spiral) pasta
1/2 to 1
cup shredded cheddar cheese (or 4-cheese Mexican cheese mix)

 

 

Cut cube steaks lengthwise into 1-inch wide strips and then crosswise into 1-inch pieces.

 

Heat oil in Dutch oven over medium-high heat until hot.  Add beef and onion; cook and stir 3 minutes.  Season with salt.  Stir in taco seasoning, tomatoes, water, and pasta; bring to a boil.  Reduce heat to low, cover tightly and simmer 20 minutes or until pasta is tender.  Sprinkle with cheese before serving.
