Linda’s Favorite Meat Loaf

 

This is the old standard recipe on the oatmeal box, but it is my favorite.  I usually make it in the food processor, to avoid getting my hands all messy.

pounds ground beef

cup tomato juice     
3/4
cup oatmeal, uncooked
1
egg, beaten
1/4
cup finely chopped onion
1
teaspoon salt
1/4
teaspoon pepper

 

 

Combine ingredients; mix well.  Press firmly into loaf shape on baking sheet.  Top with topping.   Bake in preheated 350° oven about 1 hour to 1 hour and 15 minutes.   Let stand 5 minutes before slicing. 

 

Makes 8 servings.

 

 

Topping

cup catsup

tablespoon brown sugar
1
tablespoon prepared mustard

 

 

Mix well.  Spread over raw meat loaf.
