Roast Beef Tenderloin

 

Roast Beef Tenderloin is a great Entree for Holiday dinners such as Christmas and Christmas Eve.

4-pound trimmed beef tenderloin
2
tablespoons vegetable or olive oil
Salt and pepper

 

 

 

Let roast stand at room temperature for 1 hour, covered loosely with plastic wrap.

 

Preheat oven to 425.  Rack should be in the upper middle position.

 

Rinse meat with water and pat dry.  Rub with the vegetable oil and season with salt and pepper.  Place on a wire rack set over a rimmed baking sheet.

 

Roast until the center has reached the 135 to 140 degrees, approximately 40 to 50 minutes.

 

Remove from oven, tent with foil and let rest for 20 minutes before serving. 

 

Serves 6.
