Simple Beef Stew in a Crockpot

pound beef stew meat

medium carrots, cut into 1/2-inch pieces

medium potatoes, peeled and quartered
1
small onion, cut into pieces

10-3/4-ounce can cream of mushroom or cream of celery soup
1
cup beef broth
1/2
teaspoon dried thyme
1
9-ounce package frozen cut green beans, thawed
Hot cooked noodles

 

 

In 3-1/3-or-4-quart slow cooker, combine meat, carrots, potatoes, and onion.  Mix together soup, broth and thyme and stir into beef mixture.

 

Cover and cook on low heat setting for 8 to 9 hours or on high heat setting for 4 to 4-1/2 hours. 

 

If using low-heat setting, turn to high heat setting.  Stir in beans.  Cover and cook for 10 to 15 minutes more or just until beans are tender.  Serve stew over noodles. 

 

Serves 4.
