Taco Casserole

pounds lean ground beef

1.25-ounce package McCormick Taco seasoning (1/4 cup)

8-ounce cans or 1 15-ounce can tomato sauce

16-ounce can pinto beans, drained and rinsed

11-ounce can Mexican corn mixture or whole-kernel corn, drained

cup shredded Cheddar cheese
1
cup coarsely crushed tortilla chips
Sour cream
Sliced green onions
Shredded lettuce
Chopped tomatoes

 

 

Preheat oven to 400 degrees.  Brown meat in a large skillet over medium-high heat; drain.  Stir in taco seasoning, tomato sauce, beans, and corn.  Simmer 5 minutes.

 

Spoon mixture into a rectangular 2-quart baking dish.  Top with cheese and tortilla chips.  Bake until cheese is melted, about 5 to 10 minutes.

 

Garnish with sour cream and sliced green onions, and serve with shredded lettuce and chopped tomatoes.
