Tamale Casserole

pounds ground beef

cup chopped onion

cup chopped green pepper

teaspoon seasoned salt

(1 5/8-ounce) package chili seasoning mix

(1-pound) can tomatoes

(12-ounce) can whole kernel corn, drained

(2 1/4-ounce) can small pitted black olives, drained

cup yellow cornmeal

teaspoon salt

cups cold water

cup shredded Cheddar cheese

 

 

Brown beef in skillet until crumbly.  Drain.  Add onion, green pepper, salt, chili seasoning mix and tomatoes and mix well.  Bring to boil, reduce heat and simmer, uncovered, 10 minutes.  Add corn and olives.  Spread mixture in 2-quart oblong baking dish.  Combine cornmeal, salt and cold water.  Cook until thick, about 15 minutes.  Spread evenly over beef mixture.  Bake at 350 degrees 40 minutes.  Top with cheese and bake 5 minutes longer. 

 

Makes 6 to 8 servings.
