Breast of Chicken Gismonde

 

This recipe is delicious, but not recommended for large groups, too much frying!  It is best for 2 to 4 persons.

Chicken Breasts, skinned and boned
Salt
2 or 3
eggs

tablespoon olive oil
1/3
cup finely grated bread (fresh)
1/3
cup grated Parmesan Cheese
Flour
9
tablespoons butter
8
ounces sliced mushrooms
3
cups cooked spinach

 

 

Sprinkle chicken with salt.  Beat eggs and oil together.  Combine bread and cheese.  Dip chicken in flour, then in egg mixture and finally in bread mixture.  Brown in 6 tablespoons butter about 20 minutes or until chicken is cooked, turning once.  Sauté mushrooms in 3 tablespoons butter.  Arrange chicken on hot spinach and top with mushrooms.
