Chicken and Mushrooms

10-ounce package rotini
1/2
cup butter
2
cups quartered mushrooms
1
pound chicken breasts, boned, skinned and diced
1/2
cup dry cherry
1/2
cup heavy cream
1/2
cup grated Parmesan cheese

 

 

Cook rotini to al dente.  Stir-fry mushrooms in butter; add chicken and continue cooking until chicken is almost done.  Stir in sherry and cream; heat to boiling.  Toss rotini, chicken and mushrooms and cheese. 

 

Makes 4 servings.
