Chicken Dinner in the Pot

 

This recipe is low fat and easy to make.  It works better with a heavy Dutch oven, such as Lodge or Le Creuset.

chicken half breasts, skinned

medium sized potatoes

large carrots

large onion
1/2
pound fresh green beans or 1-10 ounce package frozen beans
1
tablespoons dried parsley flakes
1/2
cup dry sherry
Salt and pepper

 

 

Preheat oven to 300°.  Place breasts in a large heavy ovenware pot.  Peel potatoes, slice 1/2 inch thick and place on top of chicken.  Peel and quarter the onion.  Peel carrot, quarter lengthwise and cut into 2 inch lengths.  Cut ends off green beans or separate frozen beans and place in the pot with onions and carrots.  Sprinkle with parsley.  Season with salt and pepper.  Pour sherry over all and cover tightly.  Bake for 2 hours.
