Classic Grilled Chicken

chicken breast halves, bone in
1/4
cup lemon juice
1/4
cup olive oil
2
tablespoons soy sauce
2
large cloves garlic, minced
1/2
teaspoon sugar
1/2
teaspoon ground cumin
1/4
teaspoon black pepper

 

 

Rinse chicken under cold running water;  pat dry with paper towels.  Put chicken in Ziploc bag.  Combine remaining ingredients ;  pour half of mixture over chicken.  Close bag, place in container  and put chicken in refrigerator for at least one hour or overnight.  Cover and reserve remaining marinade in refrigerator.

 

Remove chicken from marinade;  discard marinade.  Place meal drip pan on bottom of grill  and pour hot tap water into it until half full.    Heat grill.  Place chicken  on grill directly above drip pan.  Grill chicken, skin side down, on covered grill 25 minutes.  Baste with reserved marinade.  Turn chicken, cook 20 minutes longer or until no longer pink.
