Oven Fried Chicken

pound chicken breast halves, bone-in

cup all-purpose flour

cup Progresson Italian Style bread crumbs

cup olive oil

cup butter

 

Preheat oven to 425°F.  In medium bowl, whisk together egg and water;  set aside.  Coat chicken breasts with flour.  Dip chicken in egg mixture and then coat with bread crumbs.  Sprinkle with salt and pepper to taste.  Place coated chicken on a platter in a single layer;  freeze 5 minutes.

 

Place olive oil and butter in a 13 x 9-inch baking pan.  Heat in oven until butter is melted (approximately 3 minutes).  Place chicken, skin side down, in oil mixture.  Bake 30 minutes.  Turn chicken breasts over and bake an additional 15 minutes or until golden brown.
