Apple-Glazed Pork Roast

2 pound rolled boneless port loin roast
Vegetable cooking spray
1/4
cup apple jelly, melted
2
tablespoons Dijon mustard
1/2
teaspoon garlic powder
 

 

 

Trim fat from roast; place roast on a rack coated with cooking spray.  Place rack in a shallow roasting pan.  Combine jelly, mustard, and garlic powder; brush over roast.  Bake at 325° for 1 hour and 55 minutes or until meat thermometer registers 160° basting frequently with jelly mixture.  Let stand 10 minutes before slicing. 

 

Yield:  8 servings.
