BBQ Baby Back Ribs

Rack baby back ribs
  BBQ rub of your choice or salt and pepper
  Grandpa Mike's BBQ Sauce (see below) or BBQ sauce of your choice.

 

Cut rib rack into about 4 to 5 pieces.  Rub with BBQ rub of your choice rubs or salt and pepper.  Put the ribs in the refrigerator and let sit for 1 to 4 hours. Heat gas grill to medium.  Grill the ribs on both sides, about 5 minutes a side, or until lightly browned on each side.  Watch for flareups. Place grilled rib pieces on a parchment lined cookie sheet, cover with an additional piece of parchment and then cover tightly with aluminum foil.  Bake in 325 degree oven for 2 hours.  If you prefer your ribs to fall off the bone instead of slightly chewy, cook an additional hour. 

 

Remove ribs from oven, brush with Grandpa Mike's Barbecue Sauce or BBQ sauce of your choice and return to oven, uncovered and bake an additional 15 minutes.  Serve with additional sauce on the side. 

 

Serves 4.

 

Optional Method:

 

BBQ on Charcoal Grill. Put Rubbed ribs on Charcoal Grill. Use indirect heat, which means pile charcoal on one side of the grill leaving half of the grill empty and put pan of hot water in the empty space. Gill for about 2 hours turning every 30 minutes. Remove and apply BBQ sauce and return to grill for another 15 min.

 

 

Grandpa Mike's  Barbecue Sauce

Granpa Mikes BBQ sauce

cups ketchup

cup brown sugar

teaspoon grated lemon zest

tablespoons fresh lemon juice (juice of 1 lemon)

tablespoons molasses

tablespoon Worcestershire sauce
1 1/2
teaspoons liquid smoke

teaspoons dry mustard (preferably Coleman's)

teaspoon onion powder
1/2
teaspoon freshly ground black pepper
1/4
teaspoon freshly ground black pepper

 

 

Combine all ingredients in a nonreactive saucepan and whisk to mix.  Gradually bring the sauce to a simmer over medium heat and let simmer until thick and flavorful, 8 to 10 minutes.  Transfer the sauce to a glass bowl or jar and let cool to room temperature.  Refrigerate the sauce, covered, until serving time; let it return to room temperature before using.  The sauce can be refrigerated for several weeks. 

 

Makes 3 cups sauce.
