Carnitas Tacos

pound pork, cut in 1/2 inch cubes
1
tablespoon vegetable oil
2
tablespoons chopped onion
3
sprigs cilantro, chopped
12
corn tortillas
Guacamole

 

 

Cook meat in oil for 20 minutes.  Reduce heat and cook 30 minutes longer.  Drain meat and shred.  Combine onion and cilantro.  Heat tortillas.  To make a taco, spread warm tortilla with guacamole, then top with some of pork mixture.  Top meat with onion mixture. 

 

Roll up and serve.
