Chili Verde

pound pork, cut in small cubes

small onion, chopped

tablespoon flour

tablespoons shortening
4 to 6
green chilies, chopped

clove garlic, chopped fine
2
cups boiling water
1
16 ounce can diced tomatoes
1
tablespoon salt

 

 

 

Sprinkle pork with flour and brown, along with onions, in hot shortening.  Add chiles, garlic, tomatoes, water and salt.  Simmer about 50 minutes.  Add more boiling water, if necessary. 

 

Serve with flour tortillas.
