Favorite Posole

 

This is my favorite recipe for Posole.  I like to buy the dried Posole and cook it instead of using canned hominy.  I think that the flavor is better that way.  I use Penzey’s Chicken taco seasoning, which is a blend of salt, garlic, ancho chili, onion, Spanish paprika, cumin, cilantro, pepper, Mexican oregano and jalapeno powder.  It is an excellent seasoning for various Mexican dishes.

cups dried posole (12 ounces) (dried hominy)

pound lean pork, cubed

tablespoons Penzey’s Chicken Taco seasoning
Sliced radishes
Cilantro, chopped
Chopped onion

 

 

Soak Posole in cool water for 2 hours.  Put drained Posole and pork in large saucepan and add water to cover by 1 inch.  Cook for several hours, until Posole is tender but not falling apart.  Add the seasoning and cook an additional 20 minutes.  Serve in bowls with radishes, cilantro and onions as toppings.
