Glazed Ham Loaf

pounds ground ham

pounds ground fresh pork
1 1/2
cups soft bread crumbs ( 3-4 slices bread)
1 1/2
cups onion, finely chopped
2
eggs beaten
1/2
cup milk
 

 

Thoroughly combine meats, bread crumbs, onion, eggs and milk.  Press into loaf pan or lightly oiled 5-1/2 cup ring mold.  Invert on shallow baking pan, remove mold.  Bake 1-1/2 hours at 350° basting with glaze 3 or 4 times during baking. 

 

Serves 6-8.

 

 

Glaze

cup brown sugar

tablespoon prepared mustard
2
tablespoons vinegar
1
tablespoon water

 

Combine all ingredients thoroughly.  Use as directed above.

 

 

Mustard Sauce

tablespoons dry mustard
1/4
cup vinegar
1
egg, beaten
1/3
cup sugar
Dash of salt
Mayonnaise (approximately 1/2 cup)

 

In a jar;  mix mustard and vinegar.  Cover and let stand overnight.  In top of double boiler, stir egg, sugar and salt into mustard and vinegar mixture.  Cook over hot, not boiling water until thickened slightly.  Cool.  To serve, combine equal quantities of cooled mustard mixture and mayonnaise.  Mix and drizzle over loaf or serve separately.

 

 

Quick Mustard Sauce

 

When you're in a hurry this Mustard Sauce is a great substitute!

cup Mayonnaise

Tablespoons Dijon Mustard
1
Tablespoon Sugar
  Dash of salt

 

 

In a bowl mix all ingredients. To Serve mix and drizzle over loaf or serve separately. Excess can be refrigerated and used later. It makes a great sandwich spread.

 

 

I grind the ham in the food processor, after making the bread crumbs and chopping the onion in the food processor.
