Marinated Pork Roast

tablespoons dry mustard

teaspoons thyme
1/2
cup sherry
1/2
cup soy sauce

cloves garlic, minced
1
4 to 5 pound pork loin roast, boned, rolled and tied
1
10 ounce jar apricot preserves
1
tablespoon soy sauce
2
tablespoons sherry
 

 

Combine dry mustard, thyme, sherry, soy sauce and garlic.  Marinate the pork in this mixture overnight in refrigerator.  Place pork in roasting pan and bake uncovered at 325 degrees for 2-1/2 to 3 hours.  Combine apricot preserves, soy sauce and sherry in saucepan.  Heat until preserves melt, serve alongside pork roast. 

 

Serves 8 to 10.
