Sautéed Breaded Pork Chops

boneless loin pork chops
1 or 2
eggs, beaten
3/4 to 1
cup Italian bread crumb mixture
Vegetable or olive oil for sauteing
 

 

 

Dip meat in slightly beaten egg, coat with bread crumbs.  Heat skillet to medium hot.  Add vegetable or olive oil in thin layer.  Fry to golden brown, turning to brown both sides, approximately 10 minutes.

 

 

 

 

Italian Bread Crumbs

pound dry bread crumbs (make yourself from good bread)
1/2
cup choppede fresh parsley
3
cloves, finely minced or 1 teaspoon garlic powder
1 1/2
teaspoons salt
1
teaspoon freshly ground pepper
1
cup grated Parmesan cheese
 

 

In a bowl mix together all ingredients.  These crumbs are used for stuffings and breading meat (pork chops, veal, etc).  I usually freeze these in about 1 cup increment Ziploc bags for use as needed.
