Speedy Posole

pound lean boneless pork, cut into 1/2-inch cubes

4 ounce can diced green chiles, drained

small onion, chopped

15 ounce can diced tomatoes in tomato juice

clove garlic, crushed

teaspoon chili powder

teaspoon salt

cups chicken broth or bouillon

29 ounce can white or yellow hominy, drained

tablespoon chopped fresh cilantro

cup sour cream

 

 

Combine the pork cubes, chiles, onion, tomatoes, garlic, chili powder, salt, broth and hominy in a 4-quart pan.  Cover and simmer 30 to 35 minutes, or until pork is tender.

 

Add the cilantro; spoon into large individual soup bowls.  Top each bowl with sour cream.
