Sea Shells and Potatoes

pounds potatoes

tablespoons olive oil

sliced onions
Salt and pepper to taste

tablespoons chopped parsley

16 ounce can solid pack tomatoes
16
ounces small shell macaroni
1/2
cup grated Parmesan cheese
 

 

Peel and dice potatoes.  Heat oil in large saucepan.  Add potatoes and onions.  Cook 10 minutes, stirring constantly to prevent burning.  Add tomatoes, salt, pepper and parsley.  Cover and cook over low heat for 30 minutes.  Cook shell macaroni in 3 quarts of rapidly boiling salted water 7 to 8 minutes or until tender.  Drain and place in large hot bowl.  Add hot sauce, potatoes and cheese.  Mix thoroughly.  Serve very hot.
