Barley Pilaf

cup butter
1/2
pound fresh mushrooms, sliced

medium onion, diced
1 3/4
cup dry barley
1
quart chicken broth

 

 

Brown mushrooms in butter until lightly browned.  Remove mushrooms and sauté onion in the butter until soft.  Leave onion in pan.  Lower heat and brown barley.  Put all in a casserole and add chicken broth.  Bake at 350° for 1 hour. 

 

Serves 8.
