Wild Rice Excellente

cups chicken broth

cup wild rice (rinced)
1/4
cup butter

small onion, finely chopped

cup sliced fresh mushrooms
1/2
cup finely chopped celery
1
5-ounce can water chestnuts, chopped
1
cup long-grain white rice
1
teaspoon poultry seasoning
1/2
teaspoon salt
Dash pepper
2
tablespoons snipped parsley

 

 

Combine chicken broth and wild rice in covered saucepan; bring to a boil.  Reduce heat, simmer for 35 minutes.  Meanwhile, melt butter in skillet; sauté onion, mushrooms, celery, and water chestnuts.   When wild rice has simmered 35 minutes, add sautéed vegetables, long-grain rice, poultry seasoning, salt and pepper.  Simmer, covered for 20 additional minutes.  Stir in snipped parsley. 

 

Serves 6 to 8.
