BBQ Chicken Salad

cooked chicken breasts

cups shredded Cheddar cheese
1
large tomato, diced
1
cup Bull's Eye BBQ sauce
1
16 ounce can black beans, rinsed and drained
2
cups shredded Monterey Jack cheese
Ranch dressing
8
cups lettuce salad mix

 

 

 

Cut chicken into 1/2-inch dice.  Warm in BBQ sauce.  On 2 plates, put 1/2 of lettuce mix on each plate.  Arrange rest of ingredients on top of lettuce as follows:  row of diced tomato, row of cheddar cheese, row of chicken, row of beans, row of jack cheese, row of tomato.  Serve with Ranch dressing. 

 

Makes 2 large servings.
