Chicken Cashew Salad

cups uncooked bowtie pasta (8 ounces)

cups uncooked rainbow pasta (6 ounces)

8-ounce can pineapple tidbits, drained

8-ounce can sliced water chestnuts, rinsed and drained

cup chopped celery

cup cashews

cups cooked diced chicken (2 to 3 breasts)

11-ounce can mandarin oranges, drained

cup halved green or red grapes

cup dried cranberries (Craisins)
Salt and pepper to taste

 

 

Dressing

cup milk
1 1/2
cups Miracle whip salad dressing
1/2
teaspoon celery seed (optional

tablespoons sugar

 

 

Cook pasta according to package directions, rinse with cold water until pasta is chilled; drain well.  Add drained pineapple, water chestnuts, celery, cashews, cooked chicken, oranges, halved grapes, and dried cranberries.  Mix dressing ingredients together and pour over salad and toss to coat; salt and pepper to taste.  Cover and chill 4 to 6 hours to blend flavors. 

 

Dressing may be substituted with a 16-ounce bottle of coleslaw dressing thinned with 2 tablespoons milk.
