Chinese Noodle Salad

pound angel hair pasta

red bell pepper, slivered

carrot, slivered
1
red onion, slivered

cup pea pods
2
chicken breast halves
1
can baby corn,if desired
1/2
cup seasoned rice vinegar
1/2
cup rice vinegar
2
tablespoons sesame oil

 

Poach chicken.  Cool and then cut into slivers.  Lightly steam pea pods;  cool in ice water, then sliver.  Cook pasta until done.  Rinse with cold water.  Mix vinegars and sesame oil together for dressing.

 

Divide pasta among 4 bowls.  Arrange vegetables and chicken attractively on top of pasta.  Splash dressing over each salad. 

 

Serves 4.
