Couscous Salad

cup cooked couscous

green onions, chopped

medium-sized tomatoes, seeded and dices

cup cucumber, seeded and dices

cup cooked garbanzo beans

cup parsley, chopped

cup olive oil
1/2
cup fresh lemon juice

cloves minced garlic

teaspoon Dijon mustard
1
teaspoon ground coriander
1
teaspoon salt
Freshly ground black pepper

 

 

Mix couscous and vegetables together and toss.  Mix remaining ingredients together as a dressing and mix with the salad.  Chill.
