Finnegan Salad

piund spinach, washed and cut into bite size pieces

cucumber, peeled and diced

green pepper, diced

cup grated cheddar cheese

cup shredded red cabbage
1/4
pound mushrooms, slices
2
tomatoes, diced
1/2
head romaine lettuce, broken into bite-sized pieces
1/2
red onion, thinly sliced
1
cup broccoli flowerets
1/2
head iceberg lettuce, broken into bite-sized pieces
1
cup frozen peas, defrosted
1
cup cauliflower flowerets
1
cup sliced celery
1
cup radish slices
1
cup shredded carrot
2

hard-boiled eggs, cut into large dice

 

 

Mix all of above ingredients.  Serve with dressing of your choice.   I enjoy the following dressing with this salad.

 

Dressing

           

3/4
cup sugar
2/3
cup cider vinegar
1/3
cup vegetable oil
1
teaspoon salt
1/4
teaspoon pepper

 

 

Blend together thoroughly.  Put enough dressing on salad to just moisten it.   Save remaining dressing for another time.
