Gourmet Potato Salad

cups cubed cold boiled potatoes
1/4
cup finely chopped onion
1 1/2
teaspoon salt
1/4
teaspoon ground pepper

hard boiled eggs (See Hard Boiled Eggs Recipe)

cups sour cream

tablespoons vinegar
1
tablespoon prepared mustard
2
teaspoons celery seeds
6
tablespoons mayonnaise
1
cup sweet pickle relish

 

 

Place the potatoes and onion in bowl.  Sprinkle with salt and pepper.  Remove the yolks from the eggs.  Dice the whites and add to the potatoes.  Mash the yolks and mix with sour cream.  Stir in the vinegar, mustard, celery seeds, mayonnaise and sweet pickle relish.  Pour over potato mixture and toss lightly.
