Greek Mushroom Salad

 

1/2
bunch parsley, stems removed and sprigs chopped
4
green onions tops, chopped
1
cup (4 ounces) Swiss Cheese, cubed
1
pound fresh mushrooms, sliced

 

 

Dressing:

 

 

1/4
cup red wine vinegar
1/2
cup vegetable oil
1
tablespoon Greek seasoning

 

 

Combine parsley, green onion, cheese and mushrooms, tossing to mix.  Chill.

 

Prepare dressing by blending wine vinegar, oil and Greek seasoning.  Add dressing to salad 15 to 20 minutes before serving, tossing to coat thoroughly.  Chill until ready to serve, and then toss again. 

 

Serves 6.
