Linda’s Chinese Chicken Salad

chicken breast halves

package dole Very Veggie salad mix

10-ounce can mandarin oranges, drained
1/2
cup toasted cashews or toasted almond slivers
1
small can Chinese chow mein noodles
1/2
cup seasoned rice vinegar
1/2
cup rice vinegar
2
tablespoons sesame oil

 

 

Salt and pepper chicken breast halves.  Place in 350 degree oven on baking sheet and bake until done, about 30 minutes.  Cool.  Slice each chicken breast into thin slices.

 

Mix seasoned rice vinegar, rice vinegar and sesame oil to make dressing.

 

Divide salad mix between 3 plates or large bowls.  Top each bowl of salad mix with 1/3 of the mandarin oranges and 1 chicken breast half.  Sprinkle dressing over each salad.  Top with 1/3 of nuts and a handful of chow mein noodles. 

 

Serves 3.

 

You can replace the salad mix with a mixture of iceberg lettuce, romaine or Chinese cabbage,  slivered red cabbage, pea pods, sliced carrots and radishes.
