Linda’s Easy Coleslaw



I developed this recipe over the years.  It is easy to put together and inexpensive.  If you have a well stocked pantry, all you have to do is buy the Coleslaw mix to make Coleslaw.


14-ounce package Dole Classic Cole Slaw mix or 7 cups shredded
cabbage (can also add shredded carrots to cabbage if desired)
cup apple cider vinegar
tablespoons granulated sugar
freshly ground black pepper
teaspoon salt
cup Best Foods mayonnaise



In a 3 or 4 quart bowl, whisk together the vinegar, sugar, salt and pepper.  Whisk in the mayonnaise.  Add the Coleslaw mix or cabbage and stir to coat all of the cabbage.  Cover bowl and refrigerate for at least 1 hour and preferably 2 to 3.  The dressing will be thin and will appear to be too scant for the amount of cabbage at first, but as it sits, the cabbage will wilt down and the amount of dressing will be sufficient. 


Serves 6.
