Linda’s Macaroni Salad

22-ounce package elbow or sea shell macaroni

hard boiled eggs, diced (See Hard Boiled Eggs Recipe)

sweet pickles, diced

small onion, diced

stalks celery, diced

carrot, shredded

cups Miracle Whip salad dressing

tablespoons prepared mustard
1/4
cup sweet pickle juice

tablespoons sugar
2
tablespoons cider vinegar
1
teaspoon salt
1/2
teaspoon pepper

 

 

Cook macaroni until tender;  rinse with cold water and drain.  In large bowl, mix Miracle Whip, mustard, pickle juice, sugar, vinegar, salt and pepper.  Add macaroni, eggs, pickles, onion, celery and carrot.  Mix gently.  Chill. 

 

Serves 10.
