Orange and Romaine Toss

head romaine lettuce, torn
3
kiwi fruits, pared and sliced

11-ounce can madrarin orange sections, drained

small red onion, sliced
Orange Lime Dressing
Croutons, preferably homemade
1/3
cup pecan halves
3
ounces blue cheese, crumbled

 

 

Combine first 4 ingredients in large bowl.  Toss salad with dressing just before serving.  Top with croutons, pecans, and blue cheese. 

 

Serves 6.

 

 

Orange Lime Dressing

 

 

1/2
cup olive oil
1/4
cup fresh lime juice
2
tablespoons red wine vinegar
3
tablespoons orange marmalade
Salt and freshly ground pepper

 

 

In a small bowl, whisk together all ingredients, seasoning to taste.  Mix well. 

 

Makes 1 cup.
